Colorado Ave. Mark LeFebvre, executive chef and the bronze winner in the best chef category in The Gazette’s 2017 Best Of The Springs magazine, is making his mark with food to pair with the beer created at this brewery.

All the elements

All the elements of Cerberus Brewing Co. seem to have fallen into place organically. For former Brewers Republic manager and long-time home brewer Josh Adamski, taking the helm as part-owner and head brewer is just another example of assembling a top notch squad. Cerberus is creating something a little different and pushing the envelope of what we can expect from a brewpub.

To be perfectly honest, it’s been a few years since we had an amazing brewery open here in Colorado Springs. Yes, we’ve had some breweries open, but none with the showing that Cerberus had right off the bat. Their brewpub has been off the charts good from day one, partly due to the beer— thanks to head brewer Josh Adamski’s downright pickiness—but mostly because they’ve taken the time to perfect the experience before opening up.

The management team of Cerberus is comprised of the owners and an important addition of our head chef. Executive Chef Corey Hoff is a twelve year veteran in the industry. His seasonally inspired, constantly evolving menu is beer-centric, incorporating our beer into many of the recipes. Hoff brings his experience to Colorado Springs after honing his skills as an apprentice at the Broadmoor, working hands on with Bryan Voltaggio in his five restaurant empire in MD, and most recently as Chef de Cuisine at Cowboy Star Restaurant and Butcher Shop in Colorado Springs where he and his team won multiple awards, including: Best New Restaurant 2015, Best Entree at the Broadmoor Food and Wine Expo Competition 2015, Best Chef of Colorado Springs 2016, Best Steak of Colorado Springs 2016, Best Overall Restaurant 2016, Best Neighborhood Restaurant 2016, Best Wait Staff of Colorado Springs 2016, Best Fine Dining Restaurant of Colorado Springs 2016, Best Happy Hour of Colorado Springs 2016, and the Best of the Independent 2016.


Josh Adamski has been home brewing since 2003. He studied biology at Pikes Peak Community College and the University of Colorado at Colorado Springs. He also studied Advanced Brewing Theory with the Siebel Institute in Chicago, IL, and completed a 4 month internship at Red Leg Brewing Co. in Colorado Springs in 2015. He spent the last four years before Cerberus' opening managing Brewer’s Republic taproom downtown. Josh has twenty taps to show off the beer he and his team brewed for Cerberus Brewing Company. Typical styles range from Belgian Style Saisons, easy drinking full flavored Pilsner and Kolsch styles, a variety of Stouts and Porters, and of course, many types of IPAs. While there are several flagship beers there are also always one-off styles, seasonal brews and experimental offerings. We occasionally have guest taps from some of the best breweries around the world, plus a small selection of wines and a full offering of spirits.


Cindy Geiser brings forty-five years of administrative and management experience from the real estate, telecom and tech industries. At Cerberus she will be our office manager, bookkeeper and “brew mom”.


Tom Halfast and Jerry Morris were excited to be return to the Westside for business. Morris’ first job was at the Raintree Inn located at I-25 and Bijou. He worked there for eight years starting when he was fourteen. Together Halfast and Morris operated First Choice Printing for ten years and Century 21 Home Team for twelve years in the 1000 block of West Colorado Avenue. They have owned property on the Westside since 1991 and are happy to be back in Westside full time. After selling the print shop and the real estate office they bought the Underground downtown which they owned/managed for ten years. They sold the Underground and Brewer’s Republic to concentrate their energies on CBC. Halfast demonstrates his prowess as a gardener and COO and Morris, as President, strives to ensure the service at Cerberus Brewing Company is on par with the food and the beer.
